Thanksgiving Turkey Leftovers - Two Recipes With a Bite

Two Popular Leftover Turkey Recipes



We all wonder what in the world we are going to do with all that leftover turkey the day after Thanksgiving. Instead of just throwing it away there are a wide variety of recipes, you can create with the leftover turkey, which your family will enjoy. No, not just sandwiches for the next week. These recipes are healthy treats that will give your family something to rave about even after Thanksgiving.



One very popular leftover turkey recipe is Turkey Pie. The ingredients you will need include:



  • one thawed puff pastry (can use thawed pie crusts),


  • four cups of leftover turkey cubed,


  • one cube of chicken bouillon,


  • one cup of frozen sliced carrots,


  • eight ounces of sliced mushrooms,


  • one cup of frozen lima beans,


  • one half cup of onion chopped,


  • two tablespoons of butter or margarine,


  • one tablespoon of water,


  • one fourth cup of all purpose flour,


  • two and one half cups of milk,


  • one fourth cup of Parmesan cheese,


  • one egg white beaten,


  • salt and pepper.



Cook frozen lima beans and carrots in a saucepan until completely thawed, drain well, and set aside. Melt one tablespoon of butter over medium heat.



When melted add the mushrooms, cook until the mushrooms are brown. Take the mushrooms out of the melted with a slotted spoon and place in a large bowl.



Put another tablespoon of butter in the pan, once melted add two tablespoons of water. Now, add the onion and sauté until tender. In a small bowl, stir the milk and flour until the mixture is smooth. Now, all the flour mixture to the onions. Stir and then add the Parmesan cheese, bouillon, salt, and pepper. Once this mixture begins to boil and becomes thickened, add the rest of the ingredients, reserving a few pieces of turkey, and cook for a few minutes.



Roll out the pastry and place in the bottom of the casserole dish, put the mixture into the casserole dish, add the remaining turkey, cover with the rest of the pastry and pinch along the sides to hold together. Brush the rims with egg whites and bake for around forty minutes or until the pastry is browned.



Another yummy recipe that many love to create with their leftover turkey is Turkey a la King. This quick and easy recipe is sure to please.



You will need:



  • 2 1/2 cups of leftover turkey (bite size)


  • 1/4 cup of butter


  • 1/2 cup of chopped green pepper


  • 4 ounces of sliced mushrooms


  • 1/4 cup of all-purpose flour


  • 1 1/2 cups of milk


  • 1 can of condensed cream of mushroom soup


  • 2 ounces of chopped pimiento


  • Onion powder


  • Salt and pepper to taste.



First, melt the butter in a skillet; next add the green peppers and the mushrooms. Cook for around five minutes. Remove the vegetables using a slotted spoon and place aside. Now, add the all-purpose flour to the butter and stir until smooth.



Once smooth add the cream of mushroom soup and milk. Stir until smooth and thick. Now, all the rest of the ingredients. When mixed and warm it is ready to serve over noodles, biscuits, or bread.



Of course these recipes are not limited to the use of Thanksgiving Turkey Leftovers and the basics can be used for most white meats including Chicken.
